Channa Spinach Rice

 Channa Spinach Rice
Ingredients

• 1 cup soaked channa
• ½ cup shredded spinach
• 300 gm cooked long grained rice
• 2 tsp oil
• ½ cup thinly sliced onions
• 1 tsp ginger-garlic paste
• ½ cup finely chopped capsicum
• ½ cup finely chopped tomatoes
• ¼ tsp turmeric powder
• 1 tsp chilli powder
• 1 tsp coriander-cumin seed powder
• Salt to taste

Method
• Heat the oil in a broad non-stick pan, add the onion and sauté on a medium flame for 1 to 2 minutes, or till it turns light brown in colour.
• Add the ginger-garlic paste and sauté on a medium flame for a few seconds.
• Add the capsicum and tomatoes and sauté on a medium flame for 1 to 2 minutes.
• Add the spinach, turmeric powder, chilli powder, coriander-cumin seeds powder and 2 tbsp water. Mix well and cook on a medium flame for 1 to 2 minutes.
• Add the chana and salt and mix well. Add the rice, mix well and cook on a medium flame for 1 to 2 minutes. Serve hot.
