 Herbed Tomato and Macaroni Soup

Ingredients

• 2 cups chopped tomatoes
• 1 cup chopped carrots
• 1/4 cup cooked macaroni
• 1 tbsp olive oil
• 1 tbsp butter
• 1 tbsp finely chopped garlic (lehsun)
• 1/2 cup chopped onions
• 1 tbsp dried oregano
• 1/2 tbsp dry red chilli flakes (paprika)
• Salt and pepper to taste
• A pinch of sugar
• A sprig of parsley

Method
• Heat the olive oil and butter in a deep non-stick pan, add the garlic and sauté on a medium flame for a few seconds.
• Add the onions and sauté on a medium flame for a minute.
• Add the tomatoes, carrots, oregano, chilli flakes, sugar, salt and pepper, mix well and cook on a medium flame for five minutes, while stirring occasionally.
• Add three cups of water and mix well. Cover with a lid and cook on a medium flame for 10 to 12 minutes, while stirring occasionally.
• Allow the mixture to cool slightly and blend into a coarse mixture with the help of a hand blender.
• Transfer the mixture back to the same non-stick pan, add the macaroni, mix well and bring to boil.
• Garnish with parsley and serve hot.
