Onion and Thyme Soup

Onion and Thyme Soup  
 
Ingredients
• 2 cups sliced onions
• 1 tbsp dried thyme
• 1 tbsp butter
• 1 cup chopped spring onion greens
• 1 tbsp plain flour (maida)
• 1 recipe vegetable stock
• Salt and freshly ground black pepper (kalimirch) to taste
Method
• Heat the butter in a non-stick kadhai (wok), add the onions and sauté on a medium flame for 2 to 3 minutes.
• Add the spring onion greens, thyme and plain flour, mix well and cook on a medium flame for a few seconds, while stirring continuously.
• Add the vegetable stock, salt and pepper. Mix well and cook on a medium flame for a few minutes, while stirring occasionally.
• Serve immediately.
